Wags' Wecipes - Garlic Lime Chicken  
She’s just five-foot-three, but don’t let the height fool you. On the field, U.S. Under-20 defender Sarah Wagenfuhr is a spitfire, and she brings that same enthusiasm to the kitchen. Needless to say, Wagenfuhr, known as “Wags” to her teammates, can “bring it” when it comes to making the perfect meal. After all, this is a woman who, in her U.S. Soccer bio, listed her craziest ambition as: “To be the next Martha Stewart.” So leading up to the 2006 FIFA U-20 Women’s World Championship, Wagenfuhr will on occasion share her favorite recipes with Center Circle and ussoccer.com…and if they’re lucky, her teammates as well. In this installment of Wags’ Wecipes, Sarah goes “pollo loco” with her special recipe for Garlic Lime Chicken. It’s both succulent, and tangy. And low calorie too!
 
GARLIC LIME CHICKEN
Ingredients
1 tablespoon minced garlic
1 1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons fresh lime juice (divided - you will use 1 tablespoon at a time)
4-6 Pieces of chicken-breasts-thighs (boneless-skinless)
3 tablespoons fat-free, chicken broth (does not have to be fat-free)
1 tablespoon white vinegar
2 teaspoon chopped fresh cilantro (or dried leaf cilantro)
2 lime wedges

Cooking Directions
1) Preheat oven to 350 degrees
2) Combine first five ingredients in a small bowl, and stir in 1 tablespoon of lime juice.  Rub garlic mixture all over chicken.  Place chicken in a medium non-stick skillet.
3) Combine 1 tablespoon lime juice, broth and vinegar pour over chicken. Place over medium-high heat and bring to a boil. Remove from heat. Wrap handle of pan with foil (don’t want to burn the digits).  Then cover and bake at 350 for 30 minutes or until thermometer registers 180.
4) Remove chicken from pan, place on plates. With remaining drippings, drizzle over the chicken, sprinkle cilantro on top, and add lime wedges to top.

326 cal for thigh, 200 cal for breast (depending on size) 10g fat, 2.6 sat fat (breasts less fat and sat fat) 51g protein, 4.8 carb, 212mg chol, 4mg iron, 517 sodium

Note: This goes great with a side salad, or steamed veggies and bread if desired
